Coping Cookies baked with a pinch of support for good causes now open on 12th Ave
Coping Cookies, a queer and woman-owned bakery, has opened on Capitol Hill's 12th Ave, offering innovative cookie flavors such as Cocolemon, which features coconut, lemon, and white chocolate chips. The shop's co-owners, Sam Padilla and Ashley Hernandez, initially launched their business through bake sales at Seattle Children’s Hospital, where they raised funds for local non-profits. The overwhelming response from the mental health unit staff led to larger sales and ultimately the decision to establish a permanent storefront. Committed to social good, Coping Cookies donates a portion of its profits to selected non-profit organizations, with a new beneficiary chosen each quarter based on thorough research of their finances and impact. This quarter's beneficiary has yet to be announced, but past recipients include The WA Therapy Fund and Stonewall Youth.
As the shop settles into its new role in the community, Hernandez shared their excitement about getting to know regular customers and building relationships. Coping Cookies joins a growing list of cookie-centric establishments in the area, enhancing the culinary landscape of Capitol Hill. The shop aims not only to satisfy sweet cravings but also to foster a sense of community and support mental health initiatives.
